Blueberry Cobbler With Biscuit Crumb Topping

 Did you ever have fruit that is going down, like fast.  You know, those brown bananas that have a day or so before you have to toss them?  Don't toss those bananas, cut them up and put them in a baggie to go in the freezer if nothing else.  They are good for smoothies!  Or, there is always banana bread.  Yum.

I happen to love all things blueberry and I buy them every time I go to the grocery and then suddenly I have several containers in the fridge and there is that first sign that they may start to shrivel at any moment and must be used!  No blueberry should ever be wasted!  Of course, you can put them in a baggie and freeze them just like the bananas.  But, I had a hankerin' for something sweet and desserty and I usually make a peach and blueberry cobbler, but alas I had no peaches.  Therefore, some other recipe must be used.  I make blueberry pie, but I didn't want to make crust.  It just seemed like too much effort so I started combing the world wide web.

I found this recipe on a blog called wickedgoodkitchen.com and it sounded just perfect so I thought I would give it a try.  It's a keeper!  It's easy and delicious.  I served it for dessert tonight and our 3 year old grandson ate two helpings - with ice cream of course.

Here is what you need:

Filling:

4-5 cups fresh blueberries, rinsed, dried and sorted.  (toss those shriveled ones)
1 cup sugar
2 tsp freshly grated lemon zest
3 Tbsp all purpose flour

Biscuit Crumb Topping:

1 cup + 5 TBSP all purpose flour
6 TBSP sugar
1 & 1/2 tsp baking powder
1/4 tsp salt
6 TBSP butter, cut into bits
1 large egg, slightly beaten
1 tsp vanilla
1 TBSP sugar
1 tsp ground cinnamon

Preheat oven to 375 degrees fahrenheit

Lightly butter a 10" baking dish

Combine the sugar, lemon zest, and flour called for in the filling.

Put the blueberries in the baking dish, sprinkle with the sugar/zest/flour in a very even manner so that there is no clumping of the sugar which allows it to dissolve while baking and won't be gritty.  I stirred mine a couple of times to prevent that from happening.  Continue to evenly sprinkle until all mixture has been used.

Make the crumb topping.  Put the flour in a bowl, add the sugar, baking powder and salt.  Whisk or mix with a fork.

Cut the cold butter into small bits and cut into the flour mixture until crumbly.  I used a pastry blender, or you can use your hands.  Add the beaten egg, vanilla and stir to thoroughly mix until you have a dough type mixture.

Spread over the blueberries using your hands.

Combine the sugar and cinnamon and sprinkle over the biscuit topping.

IMPORTANT.  SET THE BAKING DISH ON A BAKING SHEET BECAUSE IT WILL COOK OVER AND YOU WILL HAVE BURNED SUGAR AND SMOKE IN YOUR KITCHEN AND DON'T ASK ME HOW I KNOW THIS.  JUST SAVE YOURSELF A MESS.   TRUST ME.

Bake for 40-45 minutes until the top is nice and brown.  Remove from the oven and serve warm with a lovely dollop of ice cream or whipped cream or - both!

This really is a wonderful cobbler.  It is not too sweet, but the lemon zest gives it a really nice brightness.  The crust is like a big soft cinnamon biscuit that is absolutely delicious.

I will be making this again, and again, and ...... you know.  Give it a try.  I think you will really like it too.

Fresh Blueberry Muffins - Yum, Yum

Happy New Year!!  Here's hoping 2013 is going to be an auspicious and fabulous year for one and all. We waved goodbye to 2012 and never looked back.   Everyone survived the end of the Mayan calendar (hooray) and we headed right on in to 2013 with a big smile on our face.  Can you see me brushing my shoulders off, waving goodbye as I forge ahead into the new year?  Here is hoping you can and will do the same.  Bye Bye 2012.  It was nice knowing you.

Now, the holidays are over and the gloom of January sets in.  Gray days.  Cold weather.  I'm really not a fan, but did you know that January is national soup month?  Yippeeeeee!  Who doesn't love soup?  I could eat it every day - seriously - even in hot weather.  Soup is delicious and nutritious.  You can get lots of veggies in one pot and that means you don't have tons of pots and pans to clean up after the meal.  If you make the batch big enough, there are left overs (sometimes for days) and soup tastes better as it melds and meshes all the flavors together.  Soup can also be frozen to enjoy at a later time.  Mmmmm, mmmm, mm.

During the "post Christmas let down", some of the family came down with the grippe, the creepy crud.  You know, the scratchy throat, hacking cough, runny nose misery.  Kids, parents, Pawpaw and Uncle Ty.  So Grandma whipped up a batch of home made chicken noodle soup, also know as Jewish penicillin.  Yes, science has found that chicken broth has medicinal value in relieving congestion.
(www.sciencedaily.com/releases/2000/10/001018075252.htm).  You can find a recipe for home made noodle soup on my blog post of September 17.  We just finished up the last of this batch for dinner tonight.  It is just perfect for these miserable January days.

To go along with the chicken noodle soup, I made a batch of fresh blueberry muffins.  Super.  Delicious.  Blueberries are known as one of the super foods high in antioxidants and are also really good for our immune system.  It's beneficial that they taste really good too.

Here is what you need to make these muffins:

1/2 cup butter, softened to room temperature
2 cups unsifted all purpose flour
1 cup sugar
2 large eggs
1/2 cup milk
2 tsp baking powder
1/2 tsp salt
1.5 - 2 cups fresh blueberries (dust with flour so they won't sink in the muffin batter)
1.5 tsp vanilla

Topping:  cinnamon sugar (2 Tbsp. cinnamon, 1 Tbsp. sugar)

preheat oven to 375 degrees F

Cream the softened butter and sugar with a mixer until light and fluffy.  Add the eggs, 1 at a time.  Mix thoroughly.

Combine the dry ingredients in a separate bowl.

Gradually add the dry ingredients to the butter/sugar mixture until thoroughly combined.  Add the milk and vanilla.  Add the flour dusted blueberries.  (don't skip this step, it keeps the blueberries from sinking to the bottom of the muffins).

Spray a 12 cup muffin pan with cooking spray.  Fill each cup 2/3 full.  Sprinkle cinnamon sugar on top.  Bake 25-30 minutes until a toothpick inserted in the center muffin come out clean.

Let me tell you, these hit the spot with that home made chicken noodle soup.  They would also be delicious to serve for breakfast or brunch, or as an afternoon snack.  If you have a muffin monster at your house, give these a try.  It's a great way to start the new year.

Sizzling Summer Salad Solutions

Hot, humid, muggy days make you rethink eating.   Nothing sounds good.  No one wants to fire up the stove and make the kitchen even more miserable.  This is an answer to the dilemma.  Simple.  Quick.  Relatively inexpensive.  Delicious.  What more could you ask for?

I made this salad for our family in Dallas when we visited, and my daughter requests it when we visit.  Talk about hot!  It was 110 in the shade.  Nobody wanted to cook.

To the salad, add some grilled chicken that has been marinated in olive oil, lemon juice, garlic and rosemary.  Now we're talking!

This is what it looks like when you serve it and oh my, is it good!  Cool, crunchy, sweet fruit, smokey chicken, candied pecans.  Yup.  That is a summer meal worthy of any hot, miserable day.  Here's how you do it.

Ingredients:

Boneless, skinless chicken breasts (I used 3 cut in half because they were so thick.  Three for $5.00 at Aldi's)
1/3 cup good extra virgin olive oil
1/3 cup fresh squeezed lemon juice
1 large clove garlic minced
1 Tbsp rosemary - fresh, minced  (you can use dried if that's what you have)

Because the chicken breasts were so thick, I cut them in half horizontally to make sure they would cook through quickly on the grill.  Salt and pepper both sides.  Mix the marinade and put into a gallon zip lock bag.  Put the chicken breasts into the marinade and "moosh" around to make sure they are covered with the marinade.  Put the bag in a bowl in case it leaks.  Place in the refrigerator for 1 to 1.5 hours.

Grill until just done.  You don't want them to be too dry.  Cut a slit in the center to make sure they are not pink and that juices run clear.  Remove from the grill when done.

Salad:

1 5 oz bag mixed spring greens or your favorite greens (1 bag from Aldi's $1.29)
1 container strawberries, topped and quartered
1 large hand full fresh blueberries (or as many as you would like)
1 small can mandarin oranges, drained
3 scallions sliced, whites and greens
5 baby carrots cut into very thin medallions
1 cup grapes, halved
 Mix in large salad bowl

Candied pecans:

1/2 cup pecan pieces or pecan halves (which you can cut up)
2 Tbsp granulated sugar
2 Tbsp water

Mix water and sugar in a small saucepan until sugar dissolves.  Place on the stove and add pecans.  Stir for several minutes while sugar mixture bubbles.  Pecans will become shiny as the sugar mixture coats them.  Watch closely, do not let burn!  Stir constantly.  Remove from stove.  Cut into pieces if using pecan halves.   Add to the large salad bowl.

I used two deep soup bowls and filled them with the salad.  I cut one of the chicken breasts for each of us and placed it on top of the salad.  (That's actually 1/2 of a whole breast)  I used a raspberry vinaigrette on my salad.  Dan doesn't eat dressings, so he used salt and pepper only.  You can use any dressing you prefer.

Not only is this a pretty salad to look at (we eat with our eyes first), it is so cool, refreshing and enjoyable.  You can get your daily allotment of fruits and veggies and not feel over stuffed when you are finished.  We have left overs for tomorrow and several chicken breasts that can be used in another recipe later in the week.  That means, little or no cooking while this sweltering heat hangs around.   I don't know about you, but I'm looking for simple and easy right now.

Give this recipe a try.  It will quickly become one of your summertime favorites.  Quick, easy, delicious, inexpensive.  Add some crusty bread and you are ready to eat.  Ideal for any summer meal.
